DINNER PARTY IN A SNAP

Here’s a luscious, frothy dessert from Venice which you whirl in a blender and drink from a martini glass… Cookies offered on the side would be nice.

For 4

½ pint vanilla ice cream
juice and zest of 1 lemon
4-6 ice cubes
4 ounces vodka (lemon flavored best)
1 cup sparkling wine (I use Prosceco)
zest of 1 lemon

Several hours ahead:

Put your vodka bottle in the freezer and your sparkling wine in the refrigerator.  Put your martini glasses in the freezer too.

Soften the ice cream a little, put it in a blender with juice and zest of 1 lemon, and give it a whirl.  Taste.  If not really lemony, add more juice and zest.  Transfer to freezer and hold until ready to serve.

To serve:

Add the vodka, sparkling wine and ice cubes to the blender and whirl until all is blended.  Pour into waiting martini glasses and garnish with lemon zest.  Serve immediately.
